Making Favourites

Ice cream sandwiches are a bit of a childhood favourite of mine, and considering how hot it seems to get here in Melbourne I decided to try a new version of the ice cream sandwich... the chocolate mousse sandwich!

I found a recipe over the the Arnotts website, looked simple enough and didn't require too make ingredients or fancy gadgets!


Mixing all the chocolate, butter and cream together was easy, however my mixture turned out a bit lumpy, may have been due to the fact the chocolate I used has melted a little in the heat waves and reformed afterwards (note self, maybe try some 'fresher' chocolate next time lol)


Once that was all combined, time to start thickening the cream! Its one of my favourite things to do, its amazing how quickly cream can be a liquid and then all of a sudden become thick and stiff! (small things amuse small minds I know!)



Fold the cream into the chocolate mixture...


Then spread it evenly over one layer of biscuits...


Then top with some more biscuits. I did make the mistake by forgetting which direction I had started laying the biscuits (my top half-sized biscuits were not laying over the bottom half-sized biscuits) so when I tried cutting it up the biscuits didn't match up, oops!


Refrigerate for 4-5 hours and then serve! Its the perfect treat you can just have a small slice (and hopefully be able to resist eating the whole lot in one go!)
